AW Blog Chain Seven

Ok, it’s time for another blog chain from the absolutewrite.com message board.

The last blog in the chain, Kappa no He, talked about comfort food (as did most everyone else before). I am going to talk about one of my favorites.

Eggs are full of protein and taste great AND they make the morning start off with energy packed goodness.

One of my favorite ways to cook an egg is to poach it in the microwave. I love them since they are not the kind I had when I was a kid, all firm and molded in a special cup, but soft and flowing like a tasty ghost of goodness. And the best part is that there is no fat involved, just a bit of water and vinegar in this quick and easy recipe.

Step 1: In a 10 oz Custard cup ADD 1/4 of a CUP of WATER and 1 TABLESPOON of White VINEGAR

note: Now would be a good time to get the toast going.

Step 2: Place the dish in the MICROWAVE and heat it for a minute so the water is BOILING.

WHILE this is happening, get a piece of PLASTIC WRAP ready as well as the EGG out of the fridge.

Step 3: When Step 2 is done open the microwave and swiftly CRACK the EGG into the WATER and cover with the PLASTIC WRAP.

Step 4: HEAT on MEDIUM for 32 seconds (the time could vary based on location and model of oven)

Step 5: REMOVE the covered dish from the MICROWAVE and let sit for ONE MINUTE.

Step 6: UNCOVER and use a slotted spoon to remove from the dish and place ontop of:

– Toast or English Muffin
– Corn beef Hash
– Home-style Potatoes
– on top of pancakes
– on it’s own in a small cup or dish

There you have a healthy and tasty egg, cooked with no fat. It’s a great way to kick off the day and only takes a few minuets to make.

Suggestions to enhance your egg:

– use some favorite herbs sprinkled on top. I am fond of tarragon as well as Ms. Dash.
– Use a slice of deli meat in-between the egg and the toast. Ham is the classic but other choices could be: Corned Beef, Turkey, or how about Smoked Salmon
– place some thinly sliced tomatoes or some grilled onions between the egg and bread.
– top with a simple poor-mans hollandaise sauce for eggs benedict. Just mix some light mayonnaise with some lemon juice, mix and the heat in the Microwave for a few seconds. The resulting sauce has most of the same ingredients as the real stuff with no a lot less work.
